Today’s prompt over at NaBloPoMo was something along the lines of what would your last meal be. I’m not really feeling that so I decided to share a recipe for a cake I made last month for my dad’s birthday that I have been meaning to post. (Also, I realized that this “challenge” isn’t tied to prompts but rather more about making sure you blog each day, hello challenge new-bie. I get it now.)
Oh wait a minute, I lied. I’m forgetting it’s November. His birthday was in September but late late September so it still feels like it was last month.
I asked him if he had any preferences and to my surprise he wanted some kind of a mocha/chocolate/coffee fusion. I wasn’t expecting that since he usually drifts towards all things fruity but I surfed around and finally settled on a recipe from Bon Appetit. After reading through the comments, I noticed a lot of angst towards the icing recipe that was listed so I opted to pair the cake with an alternative icing recipe leveraged from Bon Appetit as well.
A couple notes, I would recommend adding less expresso in the frosting and more into the cake batter. The icing was too strong and the cake lacked a lot of that coffee flavor which I was hoping to achieve. Another thing, this cake is really really dense, so if you’re looking for light and fluffy, try and find something different.
As I didn’t alter any ingredients or method, you guys can go ahead and follow the recipes listed on Bon Appetit. I definitely recommend trying it if you love this fusion of flavors.
This weekend, I’m looking forward to baking nutella cupcakes! YUM. Let’s just hope they turn out as delicious as I’m hoping them to be. If you have any tried and true recipes for it, please leave it in the comments! My tastebuds will be forever grateful.
